Fall Pumpkin Pasta Recipe

I’m a big of fan of fall – fall leaves, blanket scarves and pumpkin! While I am not a  pumpkin spice latte kind of girl, I do love baking with pumpkin during the fall. However, I wanted to try using pumpkin in a savoury dish so I experimented making a pumpkin pasta sauce. I made this pumpkin pasta on a whim as I had lots of leftover ingredients in my fridge I needed to use up! What else would you do with half a can of pumpkin puree, a quarter container of cream cheese and some chicken stock?

Meat Alternative: Crickets?

In a few of my classes I was given the opportunity to try crickets in various foods. While I was not opposed to the idea I couldn’t get my head around the crunch, the texture and the look. Fast forward to the past few months ago when I discovered cricket based protein bars and powders. For me this is a sustainable meat alternative with a smaller environmental impact! I wanted to try a few different brands to see if I liked them and if could get my head around the thought of eating crickets. Keep reading to hear my thoughts!

Oatbox July Review

I was very excited to receive my July Oatbox as I missed receiving my granola in the mail the past few months. I skipped my May and June Oatboxes due to allergies and the flavour options. The skipping process was very simple and can be done online.  The two July granola blends were Mango & White Chocolate Granola and Almond Crunch & Millet Granola. I use granola in a variety of ways such as on top of yogurt or a smoothie bowl, alone as a snack or even in baking as I did this month in Mango Muffins!

Hello Fresh Meal Subscription Review

Hello Fresh is a new meal subscription service to Canada. I have been very happy with the meal subscription boxes I have ordered from Chef’s Plate so I figured I would try another service. Hello Fresh currently delivers to  Ontario, Manitoba, Saskatchewan, Alberta, British Columbia, Newfoundland, and the Maritimes.

Rhubarb, Strawberry & Yogurt Popsicles

Rhubarb is a fruit I remember picking in my yard, and throughout my neighbourhood growing up. At some point the rhubarb plant in our yard disappeared and rhubarb disappeared from my summer diet. I forgot about it until I was in Germany last June and saw it for sale at a farmer’s market. This year I knew I wanted to buy some local rhubarb and incorporate it into some recipes!

Lentil Sloppy (Holly) Joe

UBC’s Food Services ran a competition for nutrition month searching for a recipe that would be featured in the dining areas on campus for Meatless Mondays. I entered my Lentil Sloppy Joe recipe and it was chosen from over 70 recipes to be featured this summer and into the fall. I had the opportunity to work with UBC’s executive head chef David Speight to perfect my recipe. Continue reading

Oatbox January Review

I received my first Oatbox last month and have been super happy with the granola I received and was excited to try out two new flavours. Granola and yogurt is one of my favourite breakfasts or snack. I am also a big fan of eating granola by the handful! 

OatBox sends out two 380g bags of granola in their two monthly featured flavours each month. It costs $20 a month, including taxes and shipping. You can also preview the flavours and list ingredients and have the option to switch out a bag with one of their regular granola blends. There are also certified gluten-free granola blends available.  Oatbox also provides flexibility allowing you to skip boxes if you don’t need more granola. In your first box you get a cute little glass container to take your granola on the go with you! Check out my December review to see what you receive in your first month! OatBox December Review

I have always loved getting packages in the mail. I also have a love for oats. Overnight oats, or just be eating granola by the handful is one of my favourite breakfasts and snacks. OatBox combines those loves and I couldn’t be happier with my first box!  Car2Go offered their members a free box as a holiday gift I couldn’t pass this opportunity up. I am so happy with this box I have continued my subscription and am receiving another box mid January!

My Resolution: Reduce Food Waste

I have never made a new years resolution before. This year I have a goal I have been thinking about for a while. I would like to reduce the amount of food I waste. Specifically for the month of January I would like to have zero waste of useable food in my kitchen. My university and residence is lucky to have composting facilitates. This allows me to compost any vegetable or fruit scraps that I have. However composting useable food should only be a last resort before the landfill – we really should be eating this food! So many Canadians do not have enough food to eat, yet we waste so much!

Rustic Roots: Reconnecting with Food

My faculty recently held our annual community dinner. The theme this year was Rustic Roots, and each of the five courses included a personal story about reconnecting to our food. My classmates and friends spoke about their connections with food. Everyone’s story about connecting to the roots of their food was different. Some people’s stories involved catching fish with their family, others involved the creative side to food, and some stories were about the connections we make eating as a family. Their stories inspired me to further explore my story and the connections I have with my food.
